We call it the “Seogbagji”. It’s a little different from kkagdugi. Juicy and crisp with a marinade that includes pureed Korean pear, this is a great accompaniment to ramyeon.
This style of Radish is more towards sweet and sour. It is more sour than our cabbage kimchi due to it being fermented for 1 more day to get rid of the natural bitterness of the radish.
